The Sunday Times* noted the study by the noted that tests carried out by the Scottish Agricultural College identified the following:
"Cholesterol level in Highland Beef is comparable to chicken. Highland beef contains higher protein levels and higher iron levels compared to commercially farmed beef."

Ennerdale Highland Beef comes to you exclusively from a low stress herd of 100% pure pedigree Highland Cattle naturally slow grown in the South West Slopes of NSW. Hormone and Antibiotic free, our cattle thrive in a quiet idyllic setting of green grassy paddocks amongst natural native woodlands.
Highland Cattle are generally accepted to mature into high quality carcasses, with little surface fat and high amounts of fine marbling through the meat. The meat is succulent and tender and this is because Highland Cattle are slow maturing, unlike other mainstream “Commercial” breeds. Quality takes time! Ennerdale Highland Cattle are naturally fed on Native Grasses which contain almost double the amount of beneficial Omega-3 fatty acids when compared to grain fed Cattle which contain (on average 80%) less beneficial Omega-6 fatty acids.

This is not always the case with commercial cattle. The Highland's shaggy coats and thick hides mean, unlike other cattle breeds, little fat is required to insulate under the skin. The fat is present as marbling, ensuring enhanced flavour and moisture during cooking. Additionally, Highland Cattle generally provide around a 60% bone out ratio providing additional returns to the farmer.

Our Pedigree Highland Beef Cattle have a stress-free environment, which contributes to the tenderness of the beef. Whenever our animals are handled, it is done in a quiet and calm manner to minimize stress. We wander the paddock often, so the Cattle approach us rather than run away, as is the case on many farms. At the end of the day, when it is time to leave the farm, the animals are transported with ‘a mate’ and never alone.
Cattle are herd animals, and they can stress when separated at any time in their lives, male or female. We follow our animals through the process after leaving the farm to assure the meat at the end of the day is of the highest quality. We know we have given these animals the best environment and the quality of their life is reflected in the quality of premium Ennerdale Beef.

Expect quality service
The whole procedure is within the guidelines of the Australian Meat Standards.
We sell our highland beef in quarters, halves or a whole carcase. We can also ship a full carcase to your butcher; prior arrangements will need to be clarified before this option is available
Meat can be frozen for up to a year, as long as it is well packaged and keep the same constant temperature. We found as a family of four in combination with other proteins, a full beast would last a year.
Once orders are taken, the customer is notified throughout the process. Quarters weight approx. 50-65 kg before boning out.
